With Rachel gone for a few days each week now, I'm definitely not eating as well. Rachel is such a good cook, and my idea of a home-cooked meal in university was a package of Sidekicks and one of those frozen meat entrees (like Chicken Cordon Bleu) that you just stick in the oven.I do have to say that one thing I really enjoy making is Pachos (Pachos are "potato nachos"). If you've ever been to Kelly O'Bryans you've probably had them, cross-cut potato fries with melted cheese and green onions on top. Alas, I can't find those cross-cut fries anywhere, so I substitute McCain's Krinkle Cut fries, and the taste is pretty much the same. Stick in the oven for 15 minutes, with the cheese and onions on for the last three minutes, and dip in half mustard/half mayo. We have some extra ground beef that I might add in tonight. Delicious! Now I wonder if Rachel would object to us buying a deep-fryer for an extra greasy taste.
